Lemon sorbet gone wrong.....

It just never froze. It's been sitting in the freezer for a week and it's still in a form of a thick paste.
Any ideas what I can use it in? The only things that come to mind are lemonade and margaritas.
But maybe I can use it as a base for a cake? Please help, I have lots (half a gallon to be exact).
