Well the final result was less than stellar. The smelled great while baking. This is the first time I have used the Saco powdered buttermilk in a muffin, and the rise was not great. My baking powder and soda were fresh so they are not the culprits. The lemon taste was lovely, and the Sourwood honey added a delightful tang. I used White Lily flour and it may have been a bit too soft, but I don't think so. I think the fresh raspberries that I chopped in the food processor made them a bit too moist and I found upon sampling that while the raspberries tasted good, I did not like the seeds in the muffins.
Tuesday I will try Lemon Blueberry muffins. The recipe is one I have used before with success but I guess I need to tinker a bit more.
