Lemon Grass, how to use?

Finally I get me some lemon grass. I take off the tough parts, and chop up the rest for various dishes, stir fries, stews, etc. Nothing. I taste nothing, I smell nothing. Am I not using enough (1 to 2 stalks). Is lemon grass just very mild? Am I an insensitive clod (don't answer that)?
