Lemon Creme Filling

I made cookies after reading about them on the post down thread. Here are my thoughts:

Okay so I made the cookies with the filling. First one thought on the cookies. Try to use a recipe that includes rice flour or cornstarch in it. This particular recipe didn't and biting through two thin cookies without it was difficult. They had no give.

The filling did not have any bad mouthfeel. The gelatin stabilized it so it felt like oreo filling.

It did not have enough lemon zing for me. I did not measure my lemon zest though so it was probably off.

It would be perfect with more zest, if you want your cookies to last awhile.

If you are planning on making or eating them soon an all-butter filling would have more flavor. Also, you would have more fluffy,creamy mouthfeel.

I like the idea though. They are yummy and would be more so with some tweaking. Thanks for the inspiration.
