I have tons of sliced smoked salmon. Due to a low-carb diet, I can't put it on a bagel, toss it with pasta, or include it in a quiche. I'm becoming weary of doing the same old smoked salmon-cream cheese roll-ups and the scrambled eggs-with-salmon routine.
Are there any interesting and tasty ways to use smoked salmon in cooking in a low-carb application? I couldn't find anything in the Epicurious or Food & Wine recipe databases. Any suggestions would be gratefully appreciated. Thanks very much.
