Leftover Queso Flameado con Chorizo

I ordered this last night, and have never had it before, so I was surprised at what I got. It was a mound of stringy hot cheese, with some grease and a bit of chorizo in the center. It was served with a spoon and some flour tortillas. I figured that I was supposed to put the cheese on the tortilla, fold over and eat. It wasn't that easy getting the cheese out of the bowl, though. I almost needed scissors, LOL! It was good, but I couldn't use a chip in the cheese, and my DH won't touch cheese, so I brought it home. Now how can I make it a bit creamier so I can eat it, or is it a total loss?

On a side note, what is the difference between this dish and Queso Fundido?
