best uses for leftover mashed potatoes

About once a week I have a cup or so of leftover mashed potatoes (combination Yukon Gold and Russet with butter and cream).

Usually I make potato pancakes with scallions, flour, eggs, baking powder, salt. You get the idea. Sour cream on the side. Bad 4 U.

Recently I made an Indian-type fritter with cardamom seeds, cayenne, turmeric, eggs, baking powder flour. Quenelle-shaped. Puffed up nicely when fried. Chutney on the side.

Looking for other recipes that are more than the sum of their parts. Ideas?
