Hi there. The other day I stumbled upon something that knocked our socks off, but wanted to see if anyone has made a variation of gnocchi like this, and had any suggestions for improvement. After making too much gnocchi with a gorgonzola sauce and roast walnuts, I decided to pan-fry little pancakes of the leftover combined sauce and gnocchi in olive oil, served on a bed of arugula (rocket for UK cooks) with grape-tomatoes and a swizzle of aged balsamic and some shaved parmesan. Was surprisingly really, really delicious and the flavours were beautiful together. Want to make it again for a dinner party but the idea of a gnocchi pancake seems a bit...well, weird, and I'm trying to find a clever way around that part. However, if I just pan fry plain gnocchi you don't get the umame-cooked cheese flavour. So the flavour is great but the presentation needs some help. Aside from using a steel presentation ring, any suggestions? Thanks heaps.
