After years of avoiding deep frying due to an awful hood, I now have a great hood and no longer have to worry about the smell of grease permeating my underwear drawer.
So, we bought a giant bottle of olive oil at Costco and have been frying calamari, candied walnuts, falafel, arancini, etc.
But the morning after I am left with a whole mess of oil (sitting on the stove for days, usually). What do you do with all that oil? Toss? Strain and re-use? Strain through cheesecloth or coffee filter? How many times?
