I am interested in learning how to properly hone and sharpen my knives (for the record, I understand the difference). I own a quality honing steel and have purchased a whetstone, but even having watched countless online tutorials, I would much prefer some hands on learning where I could be corrected immediately if I am doing it wrong, especially as I have both German and Japanese knives with different angles and steel strengths. Does anyone have suggestions how to find such a service, and a reliable one? In the unlikely event someone local has a suggestion, I am in Rochester NY and would even drive a bit for the service.
