I got a new Le Creuset oval oven for xmas and was hoping to bake rice in it today for my new year's hoppin' john. The recipe calls for the oven temp to be at 325, but the Le Creuset directions say it should not go in an oven above 200. This seems really low to me though - especially since Williams Sonoma has a recipe linked to this piece for chicken to be roasted at 375.
Does anyone know if I should just use my old cookware, or will my Le Creuset be safe at 325?
