Languedoc---What's the 411?

With increasing frequency, I read that wines of the Languedoc are pretty good and reasonably priced. I note they are showing up as house by the glass wines at trendier haunts. Restaurant reviews mention them if they are on the house's carte de vin. But frankly, I've tasted a number from Languedoc, from Roussillon, from Nimes, from Cabardes, generally in the $7-$15 per bottle range, and I've yet to be impressed. What am I missing? Randomly selected bottles of Cotes du Rhone, Chilean Merlots, etc. seem far more reliable and slightly less expensive. Are these just passable vins de table? Are there some stellar producers? If so, are they available and where? (I'm in LA.) Merci.
