Langenstein's Better Cheddar

I've just finished making a copycat version of one of my favorite things on the planet, Langenstein's Better Cheddar. Though it is good (you really can't mess up with very sharp white cheddar, a little sour cream, chopped walnuts, green onions, cayenne, and white pepper), it's just not "quite right". Seems a little mushy.

Any hints on a copycat recipe?
