I've been doing some research on finding the best ham for Easter and came across the website of Lambert Ewers Farm in Iowa. The description of their honey glazed ham sounds like just what I'm looking for. First and foremost, it's LEAN--I am repulsed by ham fat on the inside of a ham. Second, it's described as less salty than most hams--also a big plus.
Before I put my Easter dinner in the hands of an unknown farmer in Iowa, I thought I would ask if anyone has had any experience with these folks. I would also welcome recommendations of your own personal favorites. I love them, but please no Smithfield or country hams, and no foreign equivalents. Just wet cured, brined or "city" ham suggestions for now. Web links, retail or mail order sources all welcome. I appreciate any help.
