Lamb Ham

Saw this great Facebook post by Craig Rogers, the owner of Border Springs Farm in Virginia, and thought I'd share here. He describes in it the history of the "lamb ham", a leg of lamb cured like a ham, and his attempts to recreate that once popular dish using sheep raised on his ranch. Dying to try it.
