Korean food - what is the real deal? Recommendations?

Hi everyone, I want to learn about Korean food. There is a lot I want to ask but I am just going to start with the following:

I love Kal-bi and Bul-go-gi. But, how is it supposed to be cooked? In New York, I got a charcoal grill brought to the table and the server cooked it for us. In Toronto, I had my own gas grill on the table and we cooked it ourselves. Then, there is always the option of having it cooked in the kitchen. Is any one more authentic than the others? FYI, my experiences were all from Korean-operated restaurants. Besides beef, what are the popular meat grilling dishes? I have seen pork, intestines, etc on the menu. I wouldn't mind trying anything.

I also want to venture into rice and noodles. However, I can't take hot and spicy very well. Can someone recommend any good & relatively mild rice and noodle dishes? I would appreciate Korean and English names. That would make ordering much easier.
