Awhile ago I posted queries about kombucha on this board. To my surprise, it seemed to be a food product about which most hounds were in the dark. The few who responded gave me extremely negative feedback, making me a little wary about embarking on this kitchen adventure.
Still, I gave it a shot. A month and several experiments later, all is going well and I'm loving kombucha!
In a nutshell, the end product is a light, fizzy, palate refreshing drink that's nice to have in the fridge. It would be perfect over ice on a hot day, and can be unsweetened or blended into a sweet drink (I served some with homemade grenadine to raves). Unlike soda, there's very little sugar in it. Also unlike soda, it keeps its fizz for over a week in the fridge.
