One more flat white before heading home from the Carr Fire deployment (August 2018). Caffe Pagato sources from a variety of coffee roasters. This time, I had the single origin Costa Rican beans from Sacramento's Chocolate Fish roasters. https://www.chowhound.com/post/chocol... Once again, I was super impressed by the barista skills in Redding.
If anyone had told me this spot makes KOLACHES, I would have been here on the first day! Veggie for me, mostly potato with strong thyme notes, cheddar and egg wrapped in tender slightly sweet raised dough. Wish I could have another one right now.
While Caffe Pagato appeared to be a secular establishment without overt religious references, the spirit of charity is strong here. Posted on the wall:
