knife-sharpening - report

Had posted last month looking for recs on professional sharpening for my vintage Sabatier; Doversoul recommended La Cuisine in Alexandria, and Lucullus counseled caution about belt or grinder sharpening. I took the knife to La Cuisine, which charged the princely sum of $2 to sharpen it, and turned it around in a couple of days. They do use belts, which I wasn't crazy about (diamond-dust belts, or some such thing), but the results are fabulous. The knife is wicked sharp now (zips through frozen chicken as if it were tofu), and I'm enjoying it enormously.

High praise for La Cuisine, too: Friendly & knowedgeable staff, interesting stock with some unexpected bargains (e.g. bottles of whole cardamom pods for about $6, vs. $10+ everywhere else I've found them). Worth checking out if you're in Old Town.
