I made the lentil soup linked below for dinner tonight. It calls for French lentils and I bought the little, dark green lentils labeled (accurately, I assume) "French lentils" at Whole Foods. To quote my 4 year old "It looks like mud, but it's yummy."
Are these the same as lentils du puys (sp?) that I keep reading are the best (presumably yummiest?) lentils? How much of a difference in taste or texture between these and others?
What I'm thinking about specifically is serving this soup for company. It's fine for the family as is, but if I'm serving it to company, I'd like to make something prettier. Aren't there orange lentils and yellow lentils? What do you think it will do to the soup if I use those instead?
