Key Lime Ice Cream Pie Questions...

sprout | Jun 13, 2006 01:18 PM

I wanted to make the pie linked below for Father's Day. I had a few questions about it, though, that I was hoping someone could help me with...

Does the "4-5 limes" refer to key limes? When I saw them in the store, they were much smaller than normal limes. Would that give enough juice? How much juice should I aim for? (This would also be helpful since I may end up needing to use bottled juice if I can't find key limes or if they're too expensive.)

Also, is the recipe as posted enough for a pie or would it need to be doubled? It seems like a pretty small amount of stuff... Even if not needed for the pie, could I double it to have extra ice cream?

For the graham cracker crust, how would I make that? Would it need to be baked or not baked? I have a recipe for a crust for a cream cheese pie, maybe that would work?

Thanks very much for any assistance!
