June Taylor, who sells her range of marmalades, preserves, and preserved fruits down at the Ferry Plaza market on Saturday has come up with another winner. She currently has a limited amount of both bergamot marmalade and candied bergamot peel. Both are somewhat pricey of necessity given the difficulty of obtaining this fruit, which was (I believe) developed as a cross of orange and lemon. Bergamot is, of course, most famous as a flavoring ingredient in Earl Grey tea. The marmalade was about $10 and the peel closer to $20 -- but both are incredibly good and very aromatic.
I bought the marmalade for a friend with a bergamot addiction and kept the candied peel for myself. You can use either in or with tea. But I've used the peel as a garnish for spiced saffron rice, along with some toasted pinenuts and pistachios.
June's stuff just keeps getting better all the time. I also really like her Quince cheese.
