How much joint glue is too much for Boos chopping block?

After going through 3 defective Michigan Maple end-grain 15''x15''x2'' chopping blocks and 2 Boos Blocks end-grain 15''x15''x3'' chopping blocks, I finally have a block that "seems" workable, but my gut tells me that the thick glue joints cannot be very healthy when handling vegetables/fruits (especially, when being served raw).

I am limited to 15''x15'' chopping blocks since my kitchen arrangement has me against a wall to my left and the kitchen sink to the right with a total counter space of 24''x24''. This provides enough space for quarter-sized baking sheets and/or 1.75-qt pyrex bowls around its perimeter. Hanging the chopping blocks off the counter seems safer with the heavier 3'' thick block than with the 2'' thick block.

Should I get another Boos Block or should I just have Boardsmith cut down a 16''x22''x2'' to a 15''x15''? Note that the 5 chopping blocks are on hand and pending returns.
