I am trying to decide between omakase at Jewel Bako and omakase/kaiseki at Sugiyama. In addition to general suggestions about which to pick (this time), I have the following specific questions:
From board recommendations, I decided to reserve Chef Sugiyama's station, but I haven't found any specific Jewel Bako chef recs- is there a particular chef that I should ask for? (I recently ate at Sushi Yasuda and greatly enjoyed interacting with Chef Yasuda during the meal, so any comments on chef interaction would be appreciated.)
Also, what proportion of Sugiyama's omakase/kaiseki is cooked dishes vs. sushi? And for Jewel Bako's omakase, does it include cooked dishes (they told me no, but I think this board has mentioned cooked dishes before, so maybe I just misunderstood them).
