Jelly Fish Cold Noodle

Marco Polo's relatively new menu, written in chinese on a piece of paper which is put on the wall,no english. It's absolutely delicious!
As everyone knows, the homemade noodle is the "thing" at this place. They have two types of Noodle,Lanchou Style(thin:pasta machine made) and Slice Flat(wide:sliced by hand with a tin blade). Both noodles are made to order and very fresh.Although the slice flat sounds very interesting,I strongly recommend the Lanchou style for every noodle dish. The slice flat tends to be cooked inconsistently--some part is over cooked and some part is uncooked--.The Lanchou always is cooked perfectly Al Dente. So try the jelly fish cold noodle with Lanchou style noodle. The Combination of nicely chewy jelly fish and Al Dente noodle and soy based flavor sauce is sublime.
