Jambalaya help

My husband is from New Orleans, but is one of the unfortunate few who does not have a family jambalaya recipe. We've tried several over the last few years. The flavor is always good, the problem is that it is too wet and he prefers a dry jambalaya. Simply reducing the amount of liquid doesn't seem to do the trick. We've even used recipes from places that we now serve dry jambalaya. Does anyone have a good recipe? Or know of a good trick to dry things out??? Thanks.
