The January issue of GOURMET magazine has a good 4-page article by Jonathan Gold about dining "off the beaten path" in central Italy (Tuscany, Umbria, etc.).
The article is more or less a tribute to the Slow Food guide "Osterie d'Italia," which haas been recommended often on this board.
