Italian Pot Roast

Yesterday I found a tri-tip roast "hiding" in the fridge behind all the TD leftovers. It needed to be cooked asap. Usually when I cook in my slow cooker, I just throw in my ingredients. This time, however, I used The Gourmet Slow Cooker cookbook which I've had a while and don't believe I've ever cooked from. It involves browning the meat and then browning all the vegetables, etc. I was so late starting it that we didn't have it for dinner last night but did have a taste. It was terrific and definitely worth the extra time. It could just as easily have been cooked in the oven or even on top of the stove.
