Just read a bit of:
it.hobby.cucina
In Italian, and for those who read, it has an exchange of recipes and fine points. One person asked what to do with orecchiette pasta and received a dozen replies: the most tasty was to cook them with cima di rape (broccoli rape) in olive oil containing dissolved anchovies, hot pepper. . . and wondered which cheese to top it with, parmigiano? A maven from Napoli thundered "PE-CO-RI-NO PE-CO-RI-NO PE-CO-RI-NO!" Wonderful sight: let's hope some NY restaurateurs will read it and bring more genuine cuisine over here.
