Best Italian?

I'm taking a trip to New York with my mom Dec 2-4..I want to go ahead and get reservations at the best restaurants in New York to ensure great quality and experience. I already booked Balthazar one night..but is it better lunch or dinner? Which 3 restaurants best sums up New York City, any cuisine besides, say, sushi?

Also, the best "real" Italian food in New York..I've heard Rao's is basically impossible to get into..
Which restaurant is the best choice-Il Cortile, Babbo, Baldoria, or Il Mulino? Any other "best Italian" restaurants? Input would be greatly appreciated!
