istanbul - what must I eat or buy

Finally stopped thinking about it and booked a quicky cheapo trip to Istabul for the end of November
with airfare and hotel/breakfast $561 quite a deal.

Now who's going to recommend so must go to food spot and or restaurants in Istanbul any price range but a range would be great. Last time I was there I had a blast eating rice and beans ala the shoe shine boys to high end turkish and not turkish. Brought back all kinds of spices from the spice market - loved that place - it's my version of going to musuems.

Thanks for any tips - traveling the world thru my stomach and Chowhound.
