So far I've discovered three wonderful preservative free processed meats and cold cuts: Trader Joe's hot dogs and bacon, and Beeler's smoked ham. But I would love to find sources for Italian cold cuts - gabagool, capicola, salami, mortadella, prosciutto, pancetta, etc. - that have no preservatives.
I live in SF, so if you know of local sources it may be proper, in terms of the chowhound rules, to post about them on the SF board, or email me. If you know of websites or 800 numbers, or names of producers of Italian style processed meats and cold cuts without preservatives who do a mailorder business, I would appreciate and tips you have here.
