ISO excellent gazpacho recipe

It is so hot here in Tucson (90!!) and will continue in the high 80s over the weekend, so I've decided to include a cold gazpacho (is that redundant?) in my dinner for 30. I have a recipe I like but I'd love to see yours, if it's really good.


Once I decided to do gazpacho, then I knew I needed to do a Mexican-ish main dish. So I've chosen to go super simple and make 2-3 large pans of Tortilla Tower (layered casserole of corn tortillas, meat sauce, cheese, olives) and serve sour cream, guac, salsa and hot sauce on the side so everyone can decorate it how they want to. Super easy to put together and even though it's "gringo Mexican," everyone loves it. :) I'll be cooking for these folks again in a few weeks -- it's an ongoing class at church -- so I might be more gourmet then. We shall see!
