many, many years ago (like 1998), i made this chocolate carrot cake recipes that came out into two 8" rounds, frosted with traditional cream cheese frosting. Since then, I lost the recipe and my wife never lets me forget it.
Does anyone have a recipe for this type of cake? It could have been from epicurious.com (not there now), foodtv, cusine magazine, cooks' illustrated. It was moist, spongey and not spiced heavily.
It's an important birthday this Sunday.
