ISO Charcuterie in OC

I am in search of actual charcuterie - things like ham, prociutto, saucisson, pates of all kinds - that they cut for you fresh and are not prepackaged.
The Whole Foods in Santa Clarita where we used to live has a great counter however the Whole Foods in Tustin is microscopic. And I don't really find Bristol Farms in NB all that inspiring and way too crowded anyhow.
Any ideas?
Near UCI area would be good as I am off to the Farmers Market in the am
