I guess I should have been more clear in my earlier post when I requested a recipe for green pasta.
What I didn't make clear was that I've never successfully made pasta by hand (a disgrace, given my Chowhound handle).
I'd like to rectify this, but last time I followed a recipe (I forgot from what website) for Italian pasta it was a gummy mess.
Does anyone have a tried and true basic pasta recipe to which I could add a cup of sliced basil? This will ultimately be extruded through a pasta maker attachment on a stand mixer.
If and when this turns out correctly, I need to dry the pasta before cooking. If I'm going to freeze some, do I do so before or after drying? Thank you!
