In Japan I recently had a lovely dish made with seasoned dried anchoveys ( seasoned with soy sauce, sugar, mirin and something vaguely spicy) the fish were sprinkled with sesame seeds and mixed with walnuts. I purchased some of the seasoned fish in a market, but now only have bags of dried iriko. Any thoughts or recipes on how to prepare the fish and turn them into the seasoned stuff - my questions are for example, do I soak them first? steam them and then deep fry, simmer in the soy mix, what is the soy mix, cook for how long, etc.
any suggestions or info on good links would be appreciated
