Interesting Harold McGee article - Melon-scented fish!

The November '04 Discover magazine has an interesting article on what Harold McGee's been up to recently, which is updating 'On Food and Cooking' to maybe twice it's previous size (which must bring it to 1,000 page+ range) - much of the addition regards fish, which he only lightly covered in the 1984 edition. Anyway, the article trails him through a high-end wholesaler's warehouse in California where he eventually tracks down, from Japan, a beautiful fish that apparently has the scent of cucumbers and melons! It also details the chemical process by which fish starts to smell bad rather than 'of the sea.'
