Had another great meal at the Inka Anaheim this past Saturday. Ordered the usual Saltado de Pollo, with flavorful, juicy pieces of chicken, which had a nice caramelization after being seared in a hot wok, then tossed with Peruvian spices and crispy french fries, tomatoes, red onions, tomatoes, green onion and cilantro, served on a plate with warm rice. What a great, simple dish. I squirted lots of their aji over each bite. And the aji was not overly hot, just right.
