Anyone else happen to catch "Food 911" last week when Tyler was showing some young woman how to make Gumbo to satisfy her Louisiana relatives. everything was going well until he made shrimp stock using Old Bay seasoning! This move brought hoots and howls of derision from the five or so assembled cooks including your ob't svt. Zatarain's sure, but Old Bay? This is no knock against Old Bay and its adherents but I think they'd scream if someone used Zatarain's on the Cheasapeake (Although I have done it as part of an experiment.) We were able to calm the auto-da-fe committee but only just barely.
Maybe it was a concession to marketing or to a lerger Northeastern audience. But still, it suggests sloppiness in other particulars.
