Is Induction Cooking Going to Replace Gas and Electric Coil?

Hi All,

I see quite a bit of talk on here, and elsewhere, about induction cooking. I have never used an induction cooktop myself, but I am intrigued by the claims of greater energy efficiency. However, I am also mostly a copper cookware user and cannot imagine using anything that is not compatible with copper. I also wonder about the high cost of induction cooktops and the high cost to repair or replace an induction burner should it fail. I generally gravitate toward things that are easier for myself to repair should something go wrong including wood stove (my favorite, but relatively uncommon for most), older gas stoves, and electric coil. My assumption is that when an induction stove fails then you have replace the unit and that this becomes part of a larger cycle of mass-production and disposable appliances.

What do other people think? Is induction going to move from the margins of the cooktop market and capture the mainstream, or is induction going to continue to be just one of the options available for your home stove set up? Do you use induction, and if so, do you prefer it to other cooktop options? Why or why not?
