(Indianapolis) Tony Hanslits update & challenge

Rex Gai | Feb 13, 200405:56 PM

I heard it from a birdie that Chef Tone is sous cheffing for chef Joe Miller at the Meridian Hills Country Club (I think that's Tony's gig before he broke out on his own at TdT, not sous chef, but chef). Funny how the worm turns, since Joe was Tony's sous chef at, I believe, Soumething Different, all those years ago. This is all third hand from Carl Huckaby, chef at Chez Jean. I pray that Tony moves on to another public gig, because he is essentially "out of commission" for us mere mortals and chiffonading daikon for the nouveau riche.

Oh, and same source informed me that Casey Uglow's splendid charmer The Pidge rolled up its awnings a month or so ago for good due to lack of business.

That's it folks! Dammit! Enuf!!!! Quit habituating the likes of Little Italy, PF Chang's (a fave of mine, actually) and ALL those pricey chain beefarias. Buca too! That also means Palomono, Oceanaire, Bonefish, The Ram, and all those crap low-end places like Applebys & Chi-Chis & the various Roadhouses, they take from the same nut as much as the others. Put our feet where our mouths have been. Stand up for the locals who dish just as good, no, far better victuals, often at better prices (Something Different and its ilk notwithstanding). The chain meet markets (sic) are putting home-growns and mom n' pops outta biz. It's gotta stop before we lose ALL our treasures.

See ya at the trough
