Sorry this is so late but I had to locate the recipe:
it is from Indian Home Cooking by Savi Saran...an excellent Indian cookbook
Smoked eggplant-Biangan Kaa Bhartaa
1 lg. eggplant
3 tlb. canola oil
a 1" piece of fresh ginger, peeled and finely chopped
1 lg. red onion, finely chopped
1 tsp. salt, or to taste
2 garlic cloves, ground to paste
1 tlb. unsweetened shredded coconut
1 tlb.ground coriander
1/2 tsp. ground cumin
1/2 tsp. garam masala
1/4 tsp. cayenne pepper
2 ripe med. tomatoes, chopped
1/2 fresh hot green chili, chopped
2 tlb. chopped fresh cilantro
juice of 1/2 lemon
Roast eggplant on cookie sheet 500 heat until flesh is soft and skin is blackened (approx. 20 min.). Let cool and peel skin with your fingers, rinsing hands in water as you go. Don't worry if you cannot get all of the skin off. Mash eggplant in bowl with masher.
Heat oil in skillet and cook ginger, 30 sec. Add onions and salt and cook until onions begin to brown (10 min.).
Add garlic and cook 30 sec. Add coconut and stir 1 min. Add spices and cook 1 min. Add 1 tlb. water and cook stirring until onion begins to stick, 1 min.
Add tomatoes and stir. Add in eggplant and cook 5 min. stirring often.
Stir in fresh chile and 1 tlb. cilantro. Stir in lemon juice and salt to taste. Top with remaining cilantro.
I've had this dish in restaurants with green peas too.
