I went for some dim sum recently to a great place in Flushing, Queens where I ate my bodyweight in all the yummy treats. The cart ladies did not speak any english and my knowledge of dimsum ends with har gao, so we just pointed and ate our way through the meal.
One of the dishes we got was a small pot filled with square pieces of something what we thought was pork fat topped with some egg shreds and some scallions and sauce mixed in. But after a taste the texture was more mushy and mealy than pork fat would be and there were pieces of meat (pork?) mixed in as well.
Does anybody know what that dish was? Was it in fact pork fat just cooked in a way to change it's texture? Or was it some starchy thing flavoured w/pork and scallion sauce?
