Ideas for Traditional and "not so traditional" paris dining

Returning to Paris in May and looking for other experiences. May 2015: Bofinger, Au Borgnat, La Testavin. All very casual and just a bit too much on the average side as the dfood was concerned.
Also Last trip, ate at Bistro Paul Bert, and Josephine Chez Dumonet. would like suggestions for other places like these two, preferably serving similar style classic, traditional bistro dishes.
Also ate at 6 Paul Bert( tasting menu ) . Also looking for similar styling, with 5-8 course tasting menu, modern French cuisine?
Not so interested in Michelin star( a bit past our budget unless someone can suggest a lunch experience)
Not so price driven, but not wanting to hopefully spend 200.00 USD for two people with perhaps a average bottle of wine and maybe an aperitif each? Please help us with our next trip as all ideas are welcome!
