I was set on getting a 14" round bottomed hammered carbon steel wok with a ring but then I saw somewhere on youtube that the flat bottom was better for searing with more bottom surface area so now I don't know what I should get.
This would be for a gas burner. For the time being, I am going to use an open side burner next to the gas grill.
I had always thought the rounded bottom would be better for stirring.
Does anyone have any insight or preference on what is the best for stir-frying most things?
Of course, I can't find the video now where it was mentioned.
