Had an outstanding dinner at Hugo's a few weeks ago. I called for reservations a couple of days prior to the Saturday we would be there. They let us have the chef's tasting menu even though they usually don't offer it on Saturday nights.
It was a cold and rainy night, and we had the restaurant practically to ourselves. Here's the awesome meal we were served:
Fresh Maine Uni and Basil Bisque
Maine Shrimp Salad with celery hearts, bacon, and truffle vinaigrette
We were lucky to be there in the middle of the Maine shrimp season. The shrimp were sooo sweet.
Bamboo Steamed John Dory Fillet with coconut milk, lemongrass, and galanga
Mustard Encrusted Atlantic Cod with baby spinach and prosciutto
Surf & Turf
Monkfish and Pork Belly with black pepper gastrique, cipollini onions, and seared bok choy
The pork belly was just incredible. The waiter said the chef cooks it overnight weighted with a brick to squeeze the fat out.

Overnight Braised Short Rib with mushroom risotti and fresh herbs.
This was my favorite.
Vanilla Bean Creme Brulee with cookie
Very tasty. A great end to a great meal.
Total cost with a couple glasses of wine and tip was around $200.
They have a very reasonably priced bar menu if you don't want to go all out for dinner.
