Make your own Hot Sauce

Any hounds out there have experience making their own hot sauce? Somehow I got the idea that in 2017 I was going to perfect my own brand of hot sauce the way I like it. As you can imagine, there are a million ways to make it, and a huge culture of chili heads willing to give advice. I made one batch already this year that was described as "the best hot sauce ever" and it was nearly inedible it was so hot, at least to me, and I have a pretty good tolerance for heat. My second attempt is fermenting in the basement now. I went with more of a scientific approach to my blend of peppers. I calculated the weights of the different peppers I am using, as well as the scoville ratings so I knew approximately how hot the final product might be. As I try different blends, I can dial the heat up or down. I'm looking for some high notes of heat, some garlic, and a nice clean hit of acid to finish. Something with a lot of flavor that everyone in my family can enjoy, not just on a dare. I'll keep messing around with it, but would love to share my experience with others, and learn from anyone else who may have ventured down this path already. I'm currently working on a fermented sauce, starting with a blended mash with salt. I plan to strain it with a food mill before bottling. I'll need to wait a few more weeks before it's ready to try.
