hot chili oil recipe

mobscne | Nov 20, 201009:35 PM     5

Hello
I really hope someone can help me. I'm trying to find a recipe for hot chili oil - like the kind you would find at a chinese restaurant. I searched so many recipes online and tried each one; however, I'm not having too much luck in replicating the taste. The chili oil that I end up with tastes like there's something missing, and I can't pinpoint what it is. I also find there to be a weird after taste. I've tried hot oil fusion and cold fusion and have experimented with Szechuan Peppercorn, ginger, peanut oil and vegetable oil. Also, I used generic crushed red peppers and even dried my own.

Any tips will be greatly appreciated.
