Any hope for freezer-burn meat?

I'm trying to watch my budget so the idea of tossing what remains of the side of beef I have in the freezer kills me. Some of it has been in the deep freeze for a couple years. Mostly briskets, roasts. I don't know that it's freezer-burned, only guessing. Is there any way these large pieces of meat can be stewed/braised/or spiced to still make a decent meal? Or is it a lost cause?--last thing I want to do is ruin other ingredients on a lost cause.

Oh, also, what are the tell-tale signs that the meat is past the point of saving?
